channel set v. pave set

I am in the lucky position of being able to pick out my engagement ring. I thought that I wanted a Princess cut in the center with a ?cathedral? type band that had channel set princess diamonds down each side. However, I tried on the Cartier 1895, where the setting was absolutely gorgeous- it is a band that seems to be a cathedral type band, pretty thin (maybe 1.5-2mm?) and round pave set diamonds down each side. Unfortunately, my guy can't afford the actual Cartier ring and he's set on using his jeweler. So we are going to his jeweler who will have a ring made according to my description. My question is, what is the difference between pave set and channel set? Can princess cut diamonds be channet set? Would pave set rounds on each side (like the Cartier ring) look nice with a princess cut diamond in the center? Is there a place to find good photos of the Cartier 1895 e-ring from several views? I have the one from the Cartier website.
