are thin girdled diamonds more fragile? does it affect how well the diamond can be set?

It can be very important. The stone should be looked at by a qualified gemologist to tell you how much of the girdle is actually thin. Try to avoid stones with very thin or extremely thin and same with very thick and extremely thick.
The very thin or extremely thin might be more suseptible to chipping and the very thicks and extremely thicks is a way for the cutter to hide extra weight in the stone.

Extremly thin is what should throw up the red flags for you
on a girdle thickness. A good diamond setter can set these
types of diamonds.
