Question: we need to have our ring resized, and we've been told that you just leave it with the jewelers and come back when they're done. How worried should we be that they'd switch the diamond out of the setting for a "fake"? And if you have your GIA certificate, does that somehow deter them, or is that just insulting to them to show it?

A good jeweler does a proper take in when you leave the ring.
They should measure it, look at it under the microscope, color and clarity grade it while you are there in front of you and plot the identifying characteristics. You should also look at it as well and agree with the weight, color and clarity before leaving it. Make sure you get a receipt with everything on it before leaving it.
Upon pick up, you should again look at it under the microscope and make sure that everything matches that you agreed upon before you left it.
Also make sure the store has an insurance policy that covers your ring while it is at their stone in their possesion and that they take responsiblity for it when they work on it.
