A decent range of depths for rounds is 58 - 62%, but it's possible to find very nice stones outside this range, so don't be too dogmatic about it. Depth is the ratio between the height of the stone and its diameter, and there isn't a "better" or "worse". Generally, the smaller the depth the larger the stone will look for the same weight, but a "proper" depth works harmoniously with the other proportions to produce a bright and sparkly diamond. If all one is looking for is size, glass is much cheaper and comes in much larger chunks
It's culet, cutlets are best left in the kitchen, and it's the technical term for the small facet on the "bottom" of the stone (in fact culet means something like "little bottom" in French). If all the facets on the bottom converge to a point, the diamond has no culet (or "pointed culet")
