This is the first time I've ordered both the stone and the setting online and need to find somewhere to set it. What should I search for on google to find where I can go? What should I use to evaluate which one is the best?

Setting can be a reasonably specialised job. Having said that, most jewellers that do repairs or build custom jewellery have access to a setter, or do their own setting work particularly for relatively straightforward jobs.
The best criterion for choosing is looking at work produced by the same craftsperson(s), and seeing whether you like the quality (does it look neat? even when looked at through a 10x loupe? are the prongs all the same shape, size and angle? is the stone securely held? is the bezel regular in width and profile? are the stones set flat?). Maybe go to a couple of places with a good reputation like Tiffany's to get your eye trained. A personal recommendation from someone who buys a lot of jewellery may also be a good thing...
