How big of a deal is the fluorescence. How noticeable would medium blue be? Does this effect the diamond in regular light?

I want to get my gf a big rock but have it also look superb. I want the ring to really sparkle and look good in the light. Any help is greatly appreciated. I just can't decide and no center stone jumps out at me.

I'll let others discuss the stones. I don't do that without a lot more information and without actually looking at the stone but I'll be happy to answer your fluoro question.

In normal light, medium blue fluorescence will have no affect at all. In fact, in most artificial light, meaning indoor lighting of every kind, even strong fluorescence will have no visible affect. There just isn’t a significant UV component to normal types of lights. If you spend a lot of time at the disco or in other deliberately high UV environments you’ll notice it (and perhaps like it ) but otherwise it will have no visible effect. It doesn’t even have much of an effect on the price. Unless you’re worried about it for astrological type reasons I would put this way down at the bottom of the list of concerns.
