How does girdle play into the overall diamond cut? what's the effective difference between girdle thicknesses? does it affect the reflectivity or the symetry, etc
any info is welcome

As far as I understand, the girdle affects the diamond in two ways:
First, an overly thin girdle is prone to chipping
Second, an overly thick girdle will "hide" extra weight. Since diamonds are sold by weight, you are paying extra for additional weight that is not apparent in the visual aesthetics of the stone.
I don't believe girdle thickness plays a major factor in reflectivity or symmetry, but I defer to the other experts on this forum for a definitive answer to this question.

The girdle effects on the Diamond's Proportion and symmetry.
1.Diamond's proportion: A diamond with a thick girdle will have high total dept and it will effect the diamond's ability to reflect light. Too deep of a diamond does not reflect light as well as a diamond with good proportion, causing it with a poor appearance of brilliance and fire. Likewise a diamond's diameter will be smaller if the girdle is too thick.
Ideal girdle is: Thin, Medium, Slightly thick.
2. Diamond's symmetry: A wavy girdle will affect the diamond's symmetry, and might cause it to get poor symmetry grad by an independent gemological laboratory

I think your question was essentially answered, but I would just like to add a small point regarding polished vs. unpolished girdles.
Some (not all) lower color grade diamonds have unpolished girdles. An unpolished girdle can nominally improve the face-up color of a darker stone.
