I am looking to purchase a diamond of about 2.51 to 2.99 carat weight to be mounted on a platinum ring. I have viewed various diamonds with color ranging from F to J. I can see some difference between F and I or J, but not F and G or H. I also see more of a difference between the diamond and the its corresponding reference stone.
In your opinion, what color is most often selected for diamonds of about this size to be mounted on a platinum engagement ring?

Very good question.
The answer is Color perception in the face-up position critically depends on the diamond's Cut. The better the Cut, the 'whiter" the stone will face-up.
Hopefully in your comparisons you have compared "apples to apples", i.e.; comparing diamonds of same Cut quality. If so, the visual perception of color differences will will be inversely proportional to the range of color choices offered. In top Cuts, you will less likely be able to see a difference between a D to H or G to J than in mediocre cut quality diamonds, where the visual perception of color difference may even be on the order of one color grade.
If you cannot pick up a color difference and if a I-J-K faces up "white" to you, you might consider this color grade for the Platinum setting.

Go with the one that looks best to your eye and pocketbook. Your doing it the right way if you are actually comparing diamonds side by side and *seeing* what you prefer.
